My Portuguese Potatoe Salad



Hi everyone. As I promised in my last post about Portuguese Fish "Sargos", here´s the recipe of the salad I made to garnish my dish:

Salad Ingredients:

~ 5 Small potatoes
~ 1 Green/Red big pepper
~ 2 Medium size tomatoes
~ 1 Small onion

Seasoning Sauce:

~ 3 Tsp olive oil
~ 1 Tsp vinegar
~ Salt (at taste)
~ Dry oregano to sprinkle

Directions:

Boil the potatoes in salted water and let them cool.
Grill half of the pepper (in your stove or grill) and use the other half raw. Sometimes I use both green and red sweet peppers in this salad.
Cut potatoes in half, and all the other vegetables in very small pieces, specially onion, and mix them in a salad bowl.
Season with the sauce, mix well, and it´s ready to serve. This salad is very good in the summer to garnish both grilled and fried fish dishes. I like this salad cold, so I put it in the fridge for half an hour before serving.
This recipe serves 3.

This sounds delicious - I love potato salad but tend to use high fat mayonnaise as a dressing and this sounds like a great alternative.

This salad is really great. I also do mayonnaise salads, which I will post later, but a vinagrette sauce, as we call it, is much healthier. The oregano is the perfect match for veg salads. I can´t live without it :)
