Portuguese "Baba de Camelo" - Caramel Sweet



Today I´m posting my recipe of a delicious sweet which has a funny name in Portugal, it´s called "Baba de Camelo". Translation: Camel´s drool.

Warning: This sweet is very addictive so if you´re dieting, you better check my archives for something lighter :)

Ingredients:

~ 1 can condensed milk (cooked)
~ 5 eggs
~ 1/2 cup milk
~ 3 white gelatin leafs


Directions:

1. Buy one cooked condensed milk can or buy or a regular can and cook it yourself in a pressure pan for 40 minutes: Take all the paper out of the can, put the can in the pan, cover with water, add a couple lemon slices to the water so your pan doesn´t turn dark, close the pan and take it to medium stove for 40 minutes. Remove the can and let it cool before opening.
The longer you let the condensed milk cook, the darker it will turn. When overcooked, condensed milk burns and can´t be used. So, if you don´t have practice in cooking condensed milk cans, I suggest you buy a ready to use one.

2. Warm milk, put gelatin leaves in water until soft. Mix gelatin with milk. Reserve in fridge to cool, while preparing eggs.
This sweet is called "Camel´s drool" because it´s not thick. Sometimes I do a thicker version of this sweet adding 5 gelatin leaves dissolved in 1 cup of milk, instead of only 3 leafs and half cup of milk. Both versions are delicious.




3. Separate egg yolks and egg whites.





4. Beat well egg whites. In Portuguese: "Claras em Castelo" (whites in castle)





5. Mix egg yolks with cooked condensed milk.








6. Add milk with gelatin to previous mixture and mix well.





7. Add condensed milk to egg whites.




8. Mix gently. Take to fridge at least 4 hours before serving.
