Ingredients:
~ 2 Oranges
~ 4 Eggs
~ 50 gr of Liquid Margarine
~ 1 Cup of Sugar
~ 2 Cups of Self Rising Flour
Directions:
1. Grate the orange peel first then make juice;
2. Beat the eggs with the sugar until creamy;
3. Add butter and mix well, then add the orange peel and juice;
4. Add the flour, one cup at the time. Beat for two more minutes or until it makes bubbles.
5. Bake: 30/40 minutes in 200ºC oven.
A few tips:
* This recipe works well with orange, lemon or mixture of both.
* Don´t grate the white part of the orange skin, it´s bitter.
* Always use the eggs at ambiance temperature.
* I always use both margarine and flour to cover the baking pan.
* As topping you can make an orange caramel: mix fresh orange juice with sugar and take to low stove for five minutes or until it caramelizes.
** I´ll post some pictures later.
Bom Apetite!

Sounds delicious, Mize - I also like the idea of the orange caramel topping - yum :)
This sounds good! Such a simple recipe but I bet the oranges give it a wonderful flavor!
Baking cakes is one thing I want to do and maybe I can start with simple stuff like yours. Thanks for sharing and happy weekend.

Hi Ladies.
Thanks for your visit and comments.
Lynda: It is!
If you can, try it, it´s great for those who like fruit cakes and the caramel works very well.
Cheers!

Yes, you´re right. It´s easy and delish.
I get so "sweets hungry" each time I visit your blog! You have great recipes too.
Cheers!
Hi Crissy.
To get a hand of baking you need to start doing it. I´m sure that with some practice you´ll bake delish cakes.
If you don´t bake much it´s a good idea to start with simple recipes. I have a few here, you don´t even need to separate eggs. If you try any, let me know if you liked, ok?
Happy week!
