Portuguese Soup: Caldo Verde

Today, I´m posting a recipe of a traditional Portuguese soup called "Caldo Verde". This soup is made with Portuguese Cabbage (refered as Kale), which is dark green, but it can be done with other types: "Any of various cultivars of the genus Brassica oleracea grown for their edible leaves or flowers". The spicy sausages we use is "Chouriço" or "Linguiça".


Ingredients:

~ 150gr of chopped cabbage or Portuguese cabbage
~ 4 medium size potatoes
~ 3 medium size onions
~ 1/2 Garlic (optional)
~ 1/4 pork sausage (spicy)
~ Water, salt and olive oil

Directions:

Boil the potatoes with the onions, the garlic and salt, with enough water to cover all vegetables. When vegetables are boiled, pass with a mixer. We call a mixer "Varinha Magica".
When it starts to boil, add the chopped cabbage and a little olive oil. Let it boil again around 10 minutes. Slice the pork sausage and put in the soup before it finishes boiling or in the plate when serving.

Tip: Sometimes I add 1/4 cup of rice, but the original recipe doesn´t include it. The garlic is optional, but in my opinion it makes the soup taste better.
