Portuguese "Azevias"

Azevias are a traditional Portuguese recipe. They´re made of a dough which is filled with sweet potato´s sweet and then fried in hot oil. After frying, Azevias are covered with a mixture of white sugar and cinnamon powder.

Portuguese Azevias Recipe

Sweet Potatoes Sweet:
The first thing I do is the sweet filling.
Peel two medium size sweet potatoes and cut in pieces. Boil with only enough water to cover. Reduce to purée. Add six tablespoons of sugar (brown if you like), lemon skin (1/2 lemon) and two teaspoons of cinnamon. Mix well and take it to low stove for five minutes. Let it cool before using. The sweet potato purée looks like this:

Dough:

~ 2 Cups of self rising flour
~ 2 Tablespoons of margarine
~ 1 Tablespoon of olive oil
~ Juice of one orange
~ 3 Tablespoons of Brandy
~ 3 Tablespoons of water

Add ingredients in this order: Flour, fat, orange juice, brandy and water.
Mix well until it makes a consistent dough:

Before using, let it rest for 30 minutes.
The pictures show the next steps:

Bom Apetite!
