Meat & Carrots Stew in Tomato Sauce

Hello everyone.
Winter has arrived to Portugal bringing colder weather and some rain too. I´m back to my kitchen and already started cooking typical Portuguese winter dishes such as today´s recipe: Meat & Carrots Stew in Tomato Sauce.

Ingredients:

~ 600 gr Beef or pork in cubes
~ 5 Carrots
~ 3 Tomatoes
~ 2 Tablespoons of tomato pulp
~ 1 Onion
~ 2 Cloves Garlic
~ 1 Bay leaf
~ Fresh Parsley
~ 2 Tablespoons Olive oil
~ 1 Glass of white wine
~ Water and salt


Directions:

To cook stews I use a pressure pan.
Before cooking, prepare all ingredients:




1. Season meat with salt. For this recipe, I used beef.





2. Peel and chop carrots in large pieces.




3. Chop tomatoes without peeling.





4. Chop onion and garlic and ad olive oil. Let it fry.




5. Ad tomatoes and let them fry, near 5 minutes. Ad one bay leaf.





6. Ad 3 glasses of water, 1 of white wine and fresh parsley. Rectify salt.





7. Put the lid on the pressure pan. Cook the stew for 40 minutes in low stove temperature. After 40 minutes the meat should be well cooked. Let the pan cool and open to check. If the meat isn´t cooked yet, check the sauce, add more water if needed, and take it to stove again.





This is how my stew looked.





I made smashed potatoes to go with the stew. Sometimes, I add whole potatoes and peas to the stew.


Serves 4 dishes.

I tried this recipe last night. IT came out very delicious. The only thing is that the sauce was very fatty. What type of meat do you use.
