Portuguese Sole Fish & Vegetables Rice
There´s nothing better than a good meal of Portuguese fresh sole fish, grilled or fried. Along with "Salmonetes", Sole fish is one of the most expensive fishes in Portugal.
The pictures above shows fried Sole fish and carrots & peas rice. I just season the sole fish with salt and then flour it before frying in hot oil.
I cook vegetable rice in the following way:
I chop half an onion and fry it in two tablespoons of extra virgin olive oil. I add 200 gr of rice and let it fry for a few minutes, mixing well so the onion and rice doesn´t burn.
I add chopped carrots (1 or 2) and 3 cups (each cup has 250 ml) of water. When the rice starts boiling I add salt and peas. Before all the water evaporates I turn the heat off and cover the pan with a lid. The rice finishes cooking by itself. Sometimes, I also add sweet corn to the rice.
Vegetables rice is so versatile that can be used to serve with different types of dishes: Fish, grilled or roasted meat, omelettes, etc.

Oh rice, rice, can't live without it.
I am from California, but both of my parents were born in the Azores. Fish was something that I grew up eating and enjoyed it very much! Now that I'm an adult and am the one cooking, I want to incorporate more of the dishes that I used to eat when I was a child. I am thankful that I have stumbled upon your sight and look forward to reading your meal ideas and recipes. Thank you for your blog.
