Portuguese Caracóis



Known as Escargots , Land Snails or "Caracóis" in Portuguese, they are very appreciated around here specially the small size ones.
In Portugal, you can find a few different recipes but in general snails are very well dried (they are left without eating for a week or two so their stomachs are as empty as possible before cooking), washed and then cooked with water, salt, garlic, one or two chili pepper and plenty of oregano.
Portuguese "snails season" starts in Spring, late April beginning of May. Many cafes with terraces serve them in small plates like in the picture above.
Cooked at home or out in a cafe terrace in a sunny day, a plate of Caracóis, bread, butter and beer...it´s a must for many Portuguese.
