In winter I cook many vegetable soups. They´re healthy, not expensive, a perfect lunch for me and last for three days in the fridge.
One vegetable soup I like is "Sopa Juliana" which you can find in most regions of Portugal.
Most times, I buy small packets with fresh finelly chopped vegetables for soup. The mixture of vegetables is ready, has no chemical additions, comes in small portions and we can find different versions:
The vegetable soup mixture in the picture above consists of:
~ Carrots
~ Cabbage - We call this one "Coraçao de Boi"
~ Dark Green Portuguese Cabbage which is called "Couve Portuguesa"
When I use soup veg packets, I always do a base with just potatoes, onions, olive oil, water and salt:
After cooking well (around 20 minutes) I blend and then add the vegetable mix, previously well washed.
In Portuguese supermarkets of my region I can find, at least, six different vegetable mix for soups. With this packets and other vegetables available I can diversify my soup menu.

ReplyDeleteI make a lot of soups in the winter too. I especially like sweet potato, parsnip and onion with some stock and spices. I also love carrot and parsnip, butternut squash and red onion and leek and potato. I tend to keep the amount of stock to a minimum so the soup is really thick and creamy. I also just boil the ingredients for 10 minutes and then blend so there is no need to use any fat and this makes them great calorie wise!
ReplyDeleteI love vegetable soup, looks delicious and comforting. I like to make mine by just adding whatever vegetables I have on hand, I never have the same vegetable soup twice!
