Marinade for Chicken in the Oven


This post inaugurates my recipe´section. My first recipe is a marinade that I often use to cook a simple but tasty chicken in the oven.
This marinade is real simple, all you have to do is add ingredients in a bowl and mix them well. You can use this marinade in any type of meat.
Usually, meat marinades need to be left overnight in the fridge, but if you use it in chicken you can cook right away. This ingredient are enough for one medium size chicken:

~ Juice of 1 medium size lemon
~ ½ Glass of white wine
~ 8 Cloves of minced garlic
~ 1 tbs of salt
~ 3 tbs Sweet Pepper
~ Pinch Black Pepper

Salt the chicken and scrub it with the marinade. Put everything in a tray, and cover it with aluminum foil. Cook it in hot oven (200º/220º) for half an hour. Take it out, uncover the tray, turn the chicken around and put some sauce over it. Then, cover it again with the aluminum, and put it in the oven for another half hour. After one hour in the oven, uncover it, add some water to the sauce (+/- 4 tsp) and let it toast in both sides for another 30 minutes. I prefer to serve the chicken with salad, chips, or rice but anything goes with it, even sweet corn.



Tips:
Cover the chicken with the aluminum foil, if you don´t it comes out very dry and with no sauce left.
My favorite spice brand to use in this marinade is “Margão”, specially the sweet pepper. This brand is from McCormick & Company, and I think you can easily find it in bigger supermarkets.
