Spinach Soup

Spinach is a vegetable, very common in Portugal, that has dark green leaves and can be eaten both cooked or raw in salads. In Portugal we use this vegetable in different types of soups. I frequently cook spinach soup but I also use it in quiche pies. Today I´m posting one of my simple, yet tasty, spinach soup recipes.

Ingredients:

~ 4 Medium Potatoes
~ 3 Medium Onions
~ Leaves of Spinach
~ 1 Tsp Olive Oil
~ Salt
~ Water

Directions:

Boil the potatoes with the onions. Before vegetables are well cooked add salt and half tablespoon of olive oil.
Pass with a mixer and, if necessary, add some more water. Put it back in the heat and when it starts boiling add the spinach leaves, previously well washed, and the rest of the olive oil. Let the soup cook until spinach turn dark green, around 15 minutes. Serve hot with cubes of bread. The picture below shows how my last spinach soup looked like.

This sounds like a great recipe. I would never have thought to make spinach soup. I have always made spinach dip (great with sour dough bread). I will try this very soon. Thanks for the idea:)

When I posted this recipe I thought to myself: "Everybody knows how to make spinach soup, why am I posting this?" :)
That´s why I love blogging, we can share our costums and traditions and find new things.
