Homemade Olive Oil Mayonnaise
I prefer homemade Mayonnaise because I use Extra Virgin Portuguese Olive Oil as main fat ingredient instead of oil. Portuguese Extra Virgin Olive Oil is healthier and tastier than oil.
~ 1 Egg yolk
~ 1 Teaspoon mustard
~ Pinch of salt & black pepper at taste.
~ 2 Tablespoons of lemon juice
~ 2,5 dl Olive oil
The trick to make a perfect mayonnaise is using all ingredients at ambiance temperature.
Add ingredients by this order: Egg, mustard, salt & pepper (optional), lemon juice and, while mixing everything in a blender, slowly add the olive oil.
To obtain thicker mayonnaise add more olive oil and to liquidize add lemon juice.
Should be served right after preparation but can be stored in the fridge for one day.
